Going through actual D&D character paths gets muddy and complex and we want to avoid that as much as possible. If you want to make a character sheet for fun, we won't stop you! But you cannot pick up a skill path like Barbarian or Wizard.
You CAN study certain schools of magic via the library or ask Charlie, Dimitri or Slayd for advice of tutelage, but the growth of those kinds of skills will be difficult and take a long time to actually develop. We are probably going to handle these kinds of things on a case by case basis, in character if that makes sense!
But long story short, no you cannot level a class, but you can study to get some specific skills, if it makes sense in character. You can feel free to chat Owen for more details on those case-by-case basis ideas if there is something specific you want to pursue for plot or character reasons.
